Teriyaki whole salmon fillet by Jenni Jordan

This is a simplified version of dish my friend Linda does so well. The teriyaki sauce must be the very best quality. lt presents beautifully on a fish platter.

Serve 6

1.2kg whole salmon fillet, skin on

3-4 tbsp teriyaki sauce (Sayaka's Kitchen teriyaki sauce is the best l've found)

1 stalk lemongrass, inner stalk, finely chopped

1 tbsp maple syrup

Snow pea sprouts for garnish

Place salmon in a baking dish or ovenproof fish platter. Pour over teriyaki sauce. Sprinkle over lemon grass. Drizzle over maple syrup. Bake at 180C for 12-14 minutes. Allow to rest for 5 minutes before serving. Garnish with snow pea sprouts
